About Triptyque

Triptyque is the restaurant of star chef Niven Kunz and Virginie van Bronckhorst-Kunz. In a familiar place: in the former town hall on the Plein in Wateringen. Niven Kunz has become the youngest chef ever to cook a Michelin star in his own restaurant. He was only 24 when he received this wonderful crowning achievement. He is also the founder of the 80/20 principle and the founding father of Dutch cuisine.

Niven has been cooking according to the 80-20 philosophy since the beginning of his career: 80 percent vegetables, 20 percent other ingredients. In 2021, Triptyque won “Discovery of the year 2022” from We’re smart Greenguide. They are also number 5 of the best vegetable restaurants in the Netherlands.
